Potato Salad with Surimi

Ingredients

220 g   cooked  peeled potato cut into cubes (8oz)

120 g   Surimi flakes (4oz)

30 g   red onion cut into small cubes (1oz)

1      piece lemon (its juice)

90 g   mayonnaise (3oz)

¼     tsp ground black pepper

¼     tsp minced garlic

Salt

Serving the dish:

Lettuce leaves and decorate with chopped cilantro

  1. In a container, mix the potatoes with the onion.
  2. Add the mayonnaise, lemon juice, pepper and garlic powder.
  3. Mix the ingredients and add the Surimi.
  4. Add salt, and taste it.
  5. Serve on a lettuce leaf and decorate with chopped cilantro.
